This is non –gluten pie crust bedrock. One can use Two Brooks Farm Brown or White Rice, or our Middlins to make a texturally and tastefully elevated pie crust that matches various meat, cream based, or vegetarian dishes.
2 cups cooked Beulah Land Tan, Beulah Land Medley, Missimati Bayou Bouquet Fragrant Brown, Missimati Bayou Bouquet Fragrant White, Delta Belle, Original Mississippi Middlins White Rice Grits, Original Mississippi Middlins Brown Rice Grits, Original Mississippi Middlins Missimati White Rice Grits, OR Original Mississippi Middlins Missimati Brown Rice Grits. 2 egg whites (preferably fresh)
1 tbsp Herbes de Provence
½ cup Parmesan Reggiano or Manchego, fresh grated
Preheat oven to 350 degrees Fahrenheit.
Combine all ingredients in mixing bowl, blending well.
Butter, oil, or spray 9 inch deep dish pie pan. Spread ingredients on bottom and sides evenly. Bake for 15 to 20 minutes, until some kernels begin to brown. If using white rice, it will begin to brown 3 minutes sooner, so monitor accordingly.
