Simple, elegant, sublime.
1 cup Ecogrown Missimati Bayou Bouquet
Fragrant White Rice or Ecogrown
Delta Belle White Rice
2 tbsp coconut oil or butter
1 lemon, juice and zest (zest divided)
1 tbsp ginger, fresh grated
Salt to taste
Add lemon juice, salt, and a balance of water to make 2 cups, and microwave for 1½ minutes.
In medium saucepan, melt coconut oil or butter and add ¾ of lemon zest and ginger; sauté for 1 minute over medium heat.
Add rice, swirling or stirring to coat grains, toasting and stirring
for 1 minute. Add the heated lemon juice/water mix to the rice, stir, bring to boil, cover with tight fitting lid, reduce to simmer, and
cook for 15 minutes. Fluff, and let sit for a minute.
When plated, garnish with remaining lemon zest, and enjoy!
