INGREDIENTS

 2 cups cooked Delta Belle White Rice, cold


1 cup dried cranberries or cherries


1.5 cups crushed pineapple, drained


½ cup shredded coconut, light toasted if preferred


½ cup sour cream, or crème fraiche if preferred


1.5 cups whipped cream


½ cup chopped buttered salted pecans (simple recipe follows)


2 cups small marshmallows, more or less to suit taste


1 tsp salt


Ground nutmeg to garnish (optional)

METHOD

     Combine all ingredients in large bowl, mixing well. Chill, and then serve.
Simple salted buttered pecans (1 cup)
Preset oven to 300 degrees Fahrenheit. When warm, melt ½ stick butter on sheet, toss pecans in butter until coated. Spread pecans uniformly on sheet, sprinkle with ½ tsp salt, and baked for about 10 minutes until lightly toasted.
